Sometimes you just get hungry. Here are three snacks I make quite often when I want to have something to eat but am not hungry enough for a full meal.

Toast Bruschetta

2-3 tomatoes
3 tbsp olive oil
1 tsp balsamic vinegar
Salt and pepper
Bread (for toasting)

1. Chop the tomatoes finely, removing the hulls
2. Mix in a bowl with the oil, vinegar and seasoning
3. Chill for 30min in the fridge (optional)
4. Toast the bread and drizzle with olive oil
5.  Spoon the tomato mixture onto the toast and serve immediately

Sweet potato oven chips

Tasty and nutritious, sweet potatoes have the advantage over potatoes of not needing to be blanched before you cook them.

1-2 sweet potatoes
Olive oil
Salt and pepper
2 tbsp smoked paprika (optional)

1. Heat your oven to 200 degrees celsius.
2. Clean the sweet potatoes thoroughly and chop into chip pieces
3. Mix the olive oil and seasoning, and use it to coat the chips
4. Bake in the oven for 30minutes

Spicy beans on toast

400g tin cannellini beans
1 onion, chopped
1 clove garlic, crushed or finely chopped
Salt  & pepper
1 tsp chili powder
2 tbsp tomato purée
1 tbsp sugar
1 tbsp light soy sauce
2 slices of bread
2-3 tbsp vegetable oil

1. Fry the onions and garlic with the oil in a pan
2. Add the chilli powder and fry for another minute
3. Drain and wash the beans and add to the pan
4. Cover with water and add the tomato paste and sugar
5. Allow the mixture to reduce until the sauce is thick
6. Stir in the soy sauce and cook for another 2-3 minutes
7. Toast the bread and serve immediately
